Vanilla Cashew Fat Bombs

We are getting pretty used to eating fat bombs in our house, enjoying them often as a snack before bed. Vanilla Cashew Fat Bombs are creamy and satisfying, and just sweet enough to keep you going without the need for anything else. Enjoy these keto-friendly Vanilla Cashew Fat Bombs with a cup of hot tea or a tall glass of water.

Vanilla Cashew Fat Bombs

Ingredients

  • 3/4 cup coconut oil
  • 3/4 cup cashew butter
  • 1/2 cup coconut butter
  • 2 tsp vanilla powder or vanilla extract
  • 1/4 cup hemp seeds
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Melt the coconut oil and coconut butter in a saucepan on low. Make sure it doesn’t get too hot or it could burn on the bottom. You can use a double boiler if you have one or a stainless steel pot on top of a saucepan with water.
  2. Mix in the cashew butter until thoroughly combined, then add the remaining ingredients.
  3. Pour into a mini muffin pan with paper liners, a silicone mini muffin mold, an ice cube tray, or use a Tupperware with a flat bottom and cut them into squares after they harden.
  4. Refrigerate for 2 hours or freeze for 20 minutes until they harden. Store them in an airtight container. Enjoy!

Notes

Bonus Tip: If you have a high-powered blender you can use unsweetened coconut in place of coconut butter and raw nuts in place of nut butter but make sure to use about three times as much. Ex. Instead of ½ cup use 1-½ cups.
