Hearty Crustless Quiche
Here is a quick and easy, delicious and satisfying breakfast that can be whipped up in 5 minutes and doesn’t have to be watched while you get the kids ready for school. Add 1 cup of leftover ground sausage, beef, ham, or cooked bacon if you have it on hand. You can make this for any meal or freeze it for later.

Hearty Crustless Quiche

Ingredients
- 1-2 Tbsp. ghee unsalted butter, or animal fat
- 1 zucchini, medium grated or chopped
- ½ cup broccoli chopped
- 1 carrot grated
- 6 eggs large
- ¼ cup coconut milk, full-fat or homemade yogurt
- 1 cup cooked sausage, beef, ham, or bacon
- ½ tsp. sea salt
- 1 tsp. dried sage
- 1 tsp. dried rosemary or thyme
- 1/8 tsp. garlic powder
- pepper to taste
Instructions
- Preheat oven to 350 F. Grease an 8 or 9 inch pie dish with butter, ghee, or animal fat.
- In a medium-sized bowl whisk 6 eggs and ¼ coconut milk or yogurt, then add strained shredded zucchini, chopped broccoli, grated carrots, meat of choice, sea salt, and spices.
- Pour the mixture into the pie dish. Bake for about 30-35 minutes or until the edges are brown and the middle is set.
