Paleo Gravy (starch-free, GAPS, Paleo, Keto)

This is an amazing grain-free, GAPS-friendly, starch-free Paleo Gravy that will become your go-to gravy recipe for life. It is easy to make, requires no thickener, and turns out perfect every time.

Almost every gravy recipe out there includes some form of starch for thickening. Whether it’s the typical cornstarch or wheat flour, or a little better-for-you tapioca or arrowroot starch, it may seem impossible to make gravy without starch.

So, what do I use to thicken my starch-free Paleo Gravy?

Vegetables!!

This seems totally obvious, but I haven’t found anyone else doing it. The vegetables I add not only give this Gravy an amazingly rich flavor but, also thicken it perfectly.

When I first began creating this gravy recipe I was experimenting with grass-fed gelatin, not just because I love all its health benefits, but because typically it works great to set things up. I’ve used grass-fed gelatin to make GummiesNo-Bake Pumpkin Pie, and even Lemon Cake, and it works perfectly. The difference with gravy is that you really want to serve it warm, right? And gelatin sets up when it cools down, which doesn’t make it a real win for gravy making.

Paleo Gravy

Paleo Gravy

Ingredients

  • 3-4 cups bone broth
  • 1/2 cup butter or ghee if not using drippings
  • 3 carrots chopped
  • 2 medium onions chopped
  • 4 cloves garlic chopped
  • 1 tsp. sea salt
  • 1/2 tsp. pepper

Instructions

  1. In a medium-sized saucepan boil carrots, onion, and garlic with 2 cups of bone broth until soft, about 10 minutes. Alternatively, you can roast these vegetables with your turkey for 1-2 hours, until they are cooked through.
  2. Pour vegetables and broth into a high-powered blender and blend until smooth.
  3. Pour the blended mixture back into the pot or add to the pan with the turkey drippings if using.
  4. Melt ½ cup of butter into the pot, add additional bone broth and spices and simmer for 8 minutes.
  5. If using turkey drippings whisk the blended mixture into the pan and simmer for 8-10 minutes, stirring constantly.
  6. Serve immediately or store in an airtight container for up to 5 days.
