Vitamin C Lemonade Gummies

Ingredients

  • 1 1/4 cups water, room temperature
  • 1/2 cup lemon juice
  • 1/4 cup grass-fed beef gelatin
  • 1/4 cup Xylitol or use raw honey or add Stevia drops to taste
  • 2-4 capsules of powdered vitamin C (2000-4000 mg)

Instructions

  1. Mix all ingredients into a saucepan until smooth.
  2. Let the mixture sit for 3-5 minutes in order for the gelatin to bloom.
  3. Warm the mixture while whisking gently. Do not let boil.
  4. Pour into an 8x8 baking dish or use small silicone candy molds if you have them. Refrigerate for 1-2 hours. 30-minutes may be enough time.
  5. Once firm cut them into small squares or remove them from molds. Store in an air-tight container in the refrigerator for up to 5 days.

Bonus Tips:

To make Vitamin D gummies add some drops of vitamin D. Just be aware of how much you are adding.
