Soaked and Crisped Nuts

Nuts are much easier to digest if they are soaked or sprouted. Try these easy soaked and crisped nuts as a perfect paleo and kept snack. The soaking process breaks down antinutrients such as phytic acid and also makes vitamins more bioavailable and easier to absorb.

Phytic acid is a defense mechanism that keeps the nuts and seeds from being digested when passing through an animal’s gut allowing the plant to reproduce. Phytic acid is found in the hulls of nuts and seeds and is present in all grains and legumes too. Just like with animals we cannot properly digest this antinutrient either. When we eat food with phytic acid it causes inflammation in our guts and blocks the absorption of minerals by binding to them.  Calcium, copper, magnesium, iron, and zinc are common minerals affected.

Soaking nuts and then dehydrating them or roasting them is an easy process that will help your gut stay healthy and help eliminate symptoms of digestive distress.

Soaked and Crisped Nuts

Ingredients

  • 4-6 cups raw nuts
  • 1 Tbsp. sea salt
  • Filtered water to cover

Instructions

  1. Place 4-6 cups of nuts or seeds in a ceramic or glass bowl. Cover the nuts completely with filtered water and add 1 tsp. of sea salt per every 2 cups of seeds. Cover the bowl with a kitchen towel and let your nuts or seeds soak on the counter. Most nuts and seeds should soak for at least 8 hours and up to 12, but there are a few that can go longer such as almonds and walnuts, which can soak up to 24 hours. A few types of nuts require less soaking time, specifically cashews, pecans, and macadamia nuts, which need only 6 hours or they may get too mushy. Hemp seeds, coconut, sesame seeds, flax, and chia seeds don’t need any soaking.
  2. After the soaking time is complete drain and rinse the nuts or seeds with cold water. Let most of the water drain out of the strainer or spread the nuts/seeds out on a kitchen towel to soak up the remaining water.
  3. To dehydrate spread the nuts/seeds out and put them in a dehydrator at 120-150 degrees for 12 hours. You can also spread them out on a cookie sheet and place them in the oven turned as low as it goes (170 for most) and dry them for 12 hours or overnight is easiest. Test the nuts/seeds for crispness and continue drying as needed.

Notes

Store these nuts and seeds in glass jars and enjoy them for snacks, blend them with a little oil to make nut butter.
