Paleo Omelet Muffins (Paleo, Keto, grain-free, dairy-free)

Here is a super-easy way to make a high-protein breakfast without having to stand in front of the stove. These Paleo Omelet Muffins will bake while you are getting the kids ready for school or getting ready yourself. You could double the batch and make these cute omelet muffins for a brunch to please your guests or just make them to have ready for a couple of days in a row.

The best thing about these Paleo Omelet Muffins is that you can use leftover vegetables and meat to bulk them up. Any flavor works too. You can make them with garlic, or chili powder, add salsa, or however you like to season your eggs.

I like to add leftover cooked meat to these easy omelet muffins. They are quick to prepare and always turn out perfect. My kids love to eat these for a quick breakfast to go when they are running out the door.

When my sister makes her omelet muffins she just puts a whole piece of sliced ham in the muffin cup and then pours the egg on top. I love doing it that way too. Try it and see what you think.

Ingredients

  • 8 eggs
  • 1 cup ham or cooked sausage, chopped
  • 1/2 cup broccoli, chopped
  • 1/4 cup coconut milk, full-fat
  • 2 Tbsp. ghee or butter, melted
  • 1/2 tsp. sea salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. onion powder

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line 6 large muffin tins or 10 regular-sized muffin tins with paper baking cups.
  3. Whisk the 8 eggs together in a medium-sized mixing bowl.
  4. Add the melted ghee or butter, coconut milk, meat, vegetables, and spices. Mix until combined.
  5. Scoop or pour batter carefully into the muffin cups.
  6. Bake for 20 minutes or until almost set. They can be a little wiggly on the top as they will continue to cook out of the oven.
  7. Serve immediately or let cool and refrigerate for the next day. You can reheat them on the stove or in the oven.
