Breakfast Sausage

Who doesn’t love sausage for breakfast? This healthy version of Breakfast Sausage is completely free of sweeteners, fillers, and preservatives. You can make them with your choice of protein – grass-fed beef, heritage pork, pasture-raised turkey, or pasture-raised chicken. I’ve tried them all with this recipe. All the versions are delicious, with the added bonus of being much less expensive than quality store-bought sausage, and you know exactly what’s in yours.

I like to make up a big batch of the seasoning mix ahead of time. Then on days when my morning is moving quickly, my spice is all ready to go and I can cook up a batch of homemade Breakfast Sausage in no time.

It’s hard to find a conventional breakfast sausage without added sugar and vegetable oils. Apparently, vegetable oils are added so that the meat runs through the processor more easily. Makes sense I guess, but we still don’t want it in our sausage. And the added sugar? That always gets me too. Who feels the need to add sugar to meat?

This spice blend will add a perfect bite to your healthy Breakfast Sausage, without any additives or preservatives. You can use ground meat of your preference, pork, beef, turkey, chicken, or in any combination. If you choose lean meat, you should add in more animal fat or coconut oil.

Breakfast Sausage

Ingredients

  • 1 pound ground meat (pork, beef, turkey, chicken)
  • 1 tsp. granulated onion
  • 1 tsp. granulated garlic
  • 2 tsp. dried parsley
  • 1 1/2 tsp. ground sage
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried rosemary
  • 1/2 tsp. cinnamon
  • pinch of cloves
  • 1 tsp. sea salt
  • 1/4 - 1/2 tsp. pepper
  • 2 Tbsp. healthy oil or fat for cooking avocado or coconut oil, or animal fat

Instructions

  1. In a medium-sized bowl, add all the spices and mix them together. Add the ground meat to the bowl and mix well with a fork or your hands until the spices are well incorporated.
  2. Form the meat into small patties.
  3. Heat the oil in a large skillet over medium heat. Add the patties and cook for 4-5 minutes per side or until golden brown and cooked through.

Notes

If you have pre-mixed a large batch of spice mix, use 2 ½-3 tbsp. per pound of ground meat.

You can make this recipe even more quickly by not making patties, just leave it as ground sausage.
