Apple Crisp (grain-free, sugar-free, Paleo, GAPS, vegan)

What is Autumn without Apple Crisp? I’ve created the perfect grain-free Paleo Apple Crisp using no extra sugar and of course, nothing refined. Crisps, being loaded with fruit are not considered a Keto friendly dessert, nor are they low carb, but my version of Apple Crisp is about as healthy as you can get. If you want a wholesome way to indulge in your fall fruit bounty, I recommend my Crisp Topping. It’s so good you will never think about adding sugar to your fruit again.

We have neighbors all around us with fruit trees, most overlooked and disregarded. I hate to see so much delicious fruit go to waste. So, every year my kids and I go around to our neighbors asking permission to pick apples, pears, and plums to our hearts’ delight. It makes for a delicious crisp season.

Fruit is so naturally sweet that we never need to add sugar to our crisps, pies, or tarts, except for when using very tart berries or unripe fruit (and in those cases, I only use sweeteners from my Ultimate Guide to Sweeteners). If you usually add sugar to your fruit, try to break that habit. You’ll soon rediscover the natural sweetness. You will be amazed at how really satisfyingly sweet they are with nothing added.

My grain-free Apple Crisp Topping is made with nut flour, coconut flour, and cassava flour. For a GAPS-friendly dessert, and to stay lower in carbohydrates, replace the cassava flour with a nut or seed flour of your choice.

Apple Crisp

Ingredients

  • 6-8 large apples
  • 2 Tbsp. coconut oil or butter/ghee
  • 1 Tbsp. lemon juice
  • 1 tsp. cinnamon
Topping
  • 3/4 cup almond flour or hazelnut flour
  • 1 1/2 cup coconut, shredded unsweetened
  • 1/3 cup coconut flour
  • 1/3 cup ground flax seed
  • 1/3 cup cassava flour substitute nut flour for GAPS and starch free
  • 3/4 cup coconut oil or butter or ghee
  • 1/2 tsp sea salt
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/3 cup Erythritol or honey

Instructions

  1. Preheat your oven to 350 degrees F. Grease a 9x13 baking pan with 2 Tablespoons of ghee, butter, or coconut oil
  2. Peel the apples and slice them very thin. You can place the apple slices directly into the greased baking dish and stir in the cinnamon. Toss them with 1 Tablespoon of lemon juice to keep them from turning brown.
  3. Next place all of the dry ingredients into a small mixing bowl. Mix them until combined.
  4. Melt the coconut oil, butter, or ghee in a small saucepan over low heat. Once melted pour the liquid into the dry topping mixture and stir it until it is all combined.
  5. Spread the apples out evenly across the baking pan and scoop the mixture over the top.
  6. Place the 9x13 pan into the oven and bake uncovered for 40 minutes. Check then to see if it is getting too brown on top and if so, then cover it with foil for the remaining 20 minutes.
