Perfect Pancakes (Keto, Paleo, dairy-free, grain-free)
Light, fluffy, low carb, keto paleo pancakes. These are made with just 6 ingredients and are dairy free, grain-free, and full of healthy fats.
I am all about making paleo pancakes for my kids. I also love coming up with new grain-free pancake recipes that are low in sugar and low in carbohydrates. The last thing I want to start my kid’s day with is a breakfast high in carbohydrates and low in fat. These keto paleo pancakes are made with both almond flour and coconut flour so they are high in both protein and fiber. They don’t contain any starch which makes these grain-free pancakes excellent for an occasional splurge on a ketogenic diet.
These keto paleo pancakes are amazing, they fluff up and rise, do not stick to the pan, and are easy to flip. I’ve tried many grain-free pancake recipes that are flat and stick to the pan, but not these.
Did I mention these grain-free pancakes are categorized as Keto pancakes too? Yes, they are high fat and low carb.
Lastly, these pancakes are easy to make and have only 6 ingredients. Let’s get started….
Perfect Pancakes (Keto, Paleo, dairy-free, grain-free)
Ingredients
- 4 eggs
- 1/2 cup coconut milk, full-fat
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup warm water
- 1/8 tsp liquid stevia optional
- 1/4 tsp. baking soda
Instructions
- Whisk the eggs together in a medium mixing bowl.
- Add the coconut milk, water, and stevia and mix until well combined.
- Mix the almond flour, coconut flour, and baking soda together in a small bowl.
- Add the dry ingredients to the wet ingredients and mix well.
- Preheat a large skillet or griddle over medium heat.
- Melt 1-2 Tbsp ghee, butter, or coconut oil into the pan.
- Pour the pancake batter about 1/4 cup at a time into the pan. Allow to cook until the bubbles begin to form and the edges of the pancakes are set (2-3minutes).
- Turn each pancake over and cook an additional 2-3 minutes until golden brown.
- Remove the pancakes from the skillet or griddle and enjoy immediately or keep warm in the oven.
Notes
These keto Paleo pancakes keep well in the fridge for a couple of days. You can reheat them on the stove or even put them in the toaster. If you make a bigger batch you can freeze these pancakes for another day.
