What I love most about this chocolate chia seed mousse recipe is that it’s a “dump recipe”! This means you can dump the ingredients into one vessel to get the job done. Here, we use a high-speed blender to mix together chia seeds, coconut cream, cacao powder, keto-friendly sweetener of choice, vanilla powder, and a touch of salt.
Honestly, the hardest part will be waiting for it to chill so that you can experience that perfectly smooth, rich consistency.
Once it’s done, go ahead and play around with the toppings! Try some coconut whipped cream, chopped nuts, shredded coconuts or berries. Whatever you choose, it will be delicious!

Chocolate Chia Seed Mousse
Ingredients
- 1 cup warm water
- 1/4 cup chia seeds
- 1/3 cup coconut cream
- 3 tbsp cacao powder
- 3 tbsp monk fruit, erythritol or 1/8 tsp liquid stevia
- 1 tsp vanilla powder
- 1/4 tsp salt
Instructions
- Add of the ingredients to a high powdered blender (or use chia seed powder if you don't have one).
- Blend on high for 45 seconds or until perfectly creamy.
- Use a spatula to transfer the mousse to a bowl or jar.
- Cover the bowl or jar and place in the fridge for 3-4 hours until set.
- You can whip the mousse by hand with a whisk or fork before eating or enjoy as is.
- Optional: Top with coconut whipped cream, chopped nuts, shredded coconut, or berries.
