Instant Pot Paleo Beef Roast (Asian flavor)

Tender, juicy, and easy paleo beef roast this recipe uses coconut aminos and sesame oil to give it something extra. Without the traditional red wine or potatoes, this instant pot beef roast will please even the pickiest eaters.

As you may know, I’m not one to dive right into something new and the Instant Pot literally scared me in the beginning. While I wanted an Instant Pot for a long time, once I received one as a Christmas gift it took me at least two weeks to open the box.

Now I have to wonder why I waited so long.

Why use an Instant Pot or pressure cooker?

Well, I can tell you many reasons why you will fall in love with this thing. Here are the top 3 reasons

  • It saves time. This may be the biggest reason. None of us have the time we need and pressure cooking is quick. Most recipes take between 2 and 45 minutes in comparison to the 4-8 hours in a slow cooker.

  • It’s easy. One of the biggest things my clients complain about is that they do not have enough time to cook and the second is that bringing variety into their meals is hard. Not with an Instant Pot. No planning is required you can come home from work and throw all your ingredients into your Instant Pot, turn it on, and go relax while your dinner is making itself.

  • Everything turns out delicious. No joke, I’m really not kidding. There is not one thing that I have made that has not been fall of the bone tender. The meat literally will melt in your mouth, and that is a big statement for a pot roast. Pressure cooking retains all the moisture and tenderness of the meat you use.

Now that I have committed to using my Instant Pot weekly I am constantly amazing myself with the food I’m turning out and I can not believe it took me so long to get one.  Everything I have made in the pressure cooker has turned out better than the same recipe in the slow cooker. But that said, another amazing fact about my Instant Pot is that I can also use it as a slow cooker which is my new go-to method for making long nutrient-rich bone broth.

Let’s get to the recipe:

Making a beef roast in the instant pot or another pressure cooker is about as easy as it gets and this recipe has turned out perfect every time. The coconut aminos and sesame oil give this recipe a real facelift from the traditional pot roast flavor. My kids love the Asian flavor and are not scared to eat this beef roast.

Instant Pot Paleo Beef Roast (Asian flavor)

Ingredients

  • 1 3-5 lb beef roast Can use round or chuck, thawed
  • 2 Tbsp ghee or coconut oil
  • 2 tsp sea salt
  • 1 onion sliced
  • 4 garlic cloves roughly chopped
  • 1/2 tsp black pepper
  • 4 large carrots cut into sticks (see note for using baby carrots)
  • 2 cups beef bone broth or beef broth
  • 3 Tbsp coconut aminos gluten free tamari will work
  • 2 Tbsp sesame oil

Instructions

  1. Turn on your instant pot and set it to saute. Rub salt and pepper all over the roast to coat all sides. Cut into 2 inch thick slices.
  2. Melt the ghee or coconut oil in the pot for about 30 seconds, then add the onion and brown for 3-4 minutes. Place roast in the pot and sear each side for 2-3 minutes, repeating until all sides are browned.
  3. Turn the instant pot to the pressure cook or meat/stew cycle and make sure it is set on high. Set the timer for 45 minutes (3-pound roast) and 55 for a 5-pound roast. Add the carrots to pot and pour in the broth and coconut aminos. (Do not add the sesame oil yet). Mix it all up, place the lid on the pot and lock it. Then make sure the vent is in the sealed position.
  4. After the cooking time is over let the pressure release on its own for at least 15 minutes. So this means do not touch the pot, just let it de-pressurize on its own. After 15-20 minutes, turn vent to the venting release position allowing of the steam to vent and wait for the float valve to drop. Open it up, add the sesame oil and mix well. Then take a look at your amazing roast.
  5. Transfer the beef, onions, and carrots to a platter for serving. You can leave the roast in large chunks or shred it further.
  6. Alternatively, you can pour 2 cups of the broth, the onions, and carrots, into a blender to make the most amazing starch free gravy. Just blend it all for about one minute until smooth. Add salt, pepper, and garlic powder as needed to taste.

Notes

One more amazing feature of the Instant Pot and most electric pressure cookers is the keep warm function. After this meal is done cooking you don’t even have to be home, it will stay perfectly warm and not overcook for several hours.

Can you cook a frozen beef roast? Yes, but allow more time. If you are using a frozen roast, make sure to add about 20-30 minutes to your pressure cooking time. Follow all the other directions as is. I have not cooked a frozen beef roast yet but as soon as I do I will let you know how it turns out.
