Coconut Thyme Braised Chicken Legs

Here is one of the best ways to cook chicken, it is moist, rich, full of flavor, and the chicken falls off the bones. This Coconut Thyme Braised Chicken is quick to prepare, requires very little maintenance, and is perfect every time. Save the extra sauce for an amazing soup the next day.

I made this recipe by accident a few years ago when I needed to use up some chicken legs. Since that day it has become one of the staple comforting meals in our house. You can substitute other pieces of chicken if you don’t have enough legs.

Coconut Thyme Braised Chicken Legs

Ingredients

  • 4- 5 lbs chicken legs
  • 1 onion medium, chopped
  • 6 garlic clove
  • 2-3 Tbsp. animal fat butter, or ghee
  • 1 can coconut milk, full-fat
  • ½ cup water
  • 1 Tbsp. thyme plus 1 tsp.
  • 1 tsp. sea salt

Instructions

  1. Preheat oven to 250 F degrees
  2. Heat the animal fat, butter, or ghee in a dutch oven or a large oven-safe skillet (with a lid) over medium-high heat.
  3. Add the onion and cook for a few minutes.
  4. Add the chicken and brown the chicken on both sides for 3-4 minutes each.
  5. Add the sea salt, thyme, and chopped garlic and cook one minute longer before turning the stove off.
  6. Add the coconut milk and water, cover, and place in the oven for 2 ½ -3 hours.

Notes

Enjoy your satiating one-pot meal with cauliflower rice or eat it like a soup/stew in a bowl.
