White Chocolate Collagen Bars (nut free, Keto, Paleo, sugar free, vegan, AIP friendly)

  • 1 1/4 cup shredded unsweetened coconut can use 1/2 cup coconut butter instead!
  • 1/2 cup cacao butter
  • 1 tbsp coconut oil or ghee
  • 2 tbsp tapioca flour optional, but makes for more travel friendly bars
  • 1/3 cup collagen powder vanilla or unflavored
  • 1/8 tsp salt
  • 1 tsp vanilla powder only necessary if using unflavored collagen powder
  • 1/4 tsp liquid stevia or 2 tbsp Swerve confectioners sweetener


Blender Version (see * note below)

  • Add all of the ingredients to a high-powdered blender such as a Blentec.
  • Using the nut butter or batter setting, blend 2 or 3 times through. You want to assure that the shredded coconut is blended completely.

Stove Top Method (see ** note below)

  • Soften the coconut butter and cacao butter in a small saucepan over low heat. Be careful not to over heat, it should just be soft enough to stir. Remove from the stove.
  • Add the coconut oil, tapioca flour, collagen powder, salt, vanilla and sweetener if using and stir until well combined.
  • Line a 8x4 baking pan with parchment paper or use a flat plastic container in a similar size, or have a silicon mold ready.
  • Pour the mixture into the baking pan, plastic container, or silicon molds.
  • Chill in the fridge until firm, about 30-45 minutes. Then cut into 8 bars and enjoy!


*You can make these bars in a high powdered blender, which is the preferred way if you are using unsweetened shredded coconut.
**If you are substituting coconut butter for the shredded coconut you can make these bars in a small saucepan over low heat.
Use additional sweetener and vanilla only if using unflavored collagen powder. Also if you are not planning to take these with you as a travel snack you can definitely leave out the tapioca flour.
You can store these melt in your mouth bars in an airtight container in the fridge for up to 2 weeks. If desired, you can freeze them and take out one a time as you wish.
You may want to let them soften at room temperature before eating.
