Chocolate Chia Seed Mousse

Chia seed made their official debut back in the 1970s!

You know, those terra cotta planters shaped into different characters and faces to which water was added just so that the chia seeds could sprout to make it look like hair.

Good thing these seeds have come a long way since then because they are chock full of nutrients that are better utilized by the human body, not a planter!

Chia Seed = Power Seed!

They may be small but chia seeds provide us with:

  • A great source of fiber!
  • Minerals like iron and calcium

An Easy Treat!

What I love most about this chocolate chia seed mousse recipe that it’s a “dump recipe”!  Which means you can dump the ingredients into one vessel to get the job done.  Here, we use a high speed blender to mix together chia seeds, coconut cream, cacao powder, keto-friendly sweetener of choice, vanilla powder, and a touch of salt.

Honestly, the hardest part will be waiting for it to chill so that you can experience that perfectly smooth, rich consistency.

Once it’s done, go ahead and play around with the toppings!  Try some coconut whipped cream, chopped nuts, shredded coconuts or berries.  Whatever you choose, it will be delicious!

And just because this is a chocolate recipe, doesn’t mean you have to wait until after dinner or a special occasion to enjoy this!

Chocolate Chia Seed Mousse

  • Add of the ingredients to a high powdered blender (or use chia seed powder if you don't have one).
  • Blend on high for 45 seconds or until perfectly creamy.
  • Use a spatula to transfer the mousse to a bowl or jar.
  • Cover the bowl or jar and place in the fridge for 3-4 hours until set.
  • You can whip the mousse by hand with a whisk or fork before eating or enjoy as is.
  • Optional: Top with coconut whipped cream, chopped nuts, shredded coconut, or berries.
